Prawns, avocado and mango salad

 

This salad might be considered kitsch, but as a Queenslander born in the 70's, I love this combo in more than just an iconic way. It is a simple summer no-cook favourite of mine that is a perfect balance of healthy fats (avocados), protein (prawns) and carbs (mango). The lemon juice and lime essential oil really do make the flavours pop. It’s always a hit with kids too!

Ingredients

12 large cooked prawns, peeled and deveined

1 avocado

1 mango

Juice of 1 lemon (approx. 3 tablespoons)

1 tablespoon olive oil infused with 2 drops of Young Living lime essential oil

a handful of roughly chopped fresh coriander

salt and cracked pepper to taste

a few slices of fresh chilli sliced on the diagonal (optional)

Directions

Place prawns into a large salad bowl.

Cut avocado in half, remove seed and score each half into squares with a knife, then scoop out the flesh with a dessert spoon into the bowl with the prawns.

Chop the flesh of the mango into squares in a similar fashion as the avocado and add to the bowl.

Add in the coriander.

Drizzle the lemon juice and the lime-infused olive oil over the salad.

Season with salt and pepper to taste.

Gently mix to combine.

Serve in the salad bowl or transfer to a serving platter of choice.

Garnish with fresh chilli (if desired).

Serves 4 as a side or entrée, or 2 as a main
